- 2 1/4 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 3 1/2 tbsp sugar
- 1 1/2 tsp cinnamon
- 2 eggs (separated)
- 2 tsp vanilla extract
- 1/2 cup vegetable oil
- 2 cups whole milk
Before assembling the batter, preheat the waffle iron and spray with nonstick spray and set aside.
In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon and set aside.
In a second medium mixing bowl, beat the egg whites with an electric hand mixture until stiff peaks form and set aside.
In a third medium mixing bowl, combine the egg yolks, vegetable oil, milk, and vanilla extract. Add in the egg yolk mixture to the dry mixture and combine thoroughly. Fold in the egg whites gently.
Pour the batter onto the hot waffle iron and cook according to the instructions. Serve immediately with syrup, powdered sugar, butter, and fresh fruit.
